One of my favorite meals since childhood is baked haddock. I only remember ever having it at restaurants like Cole Farms and Governor’s but probably ordered it a third of the time since I love it!
While at the grocery store this week, Rohan asked to see the lobsters so we headed for seafood. While he was checking them out, I noticed that the haddock was on sale and couldn’t resist picking up dinner!
Rohan has been gluten free due to a couple reactions shortly after introducing solids. We try to make as many things gluten free as possible so he can have what the rest of us do and I switched completely myself last year so he would always have someone eating the same as him.
When it comes to recipes in my house, the easier the better, and this one is super simple!
Haddock-approx 1/4-1/2 pound per person (we used 2 pounds)
Your favorite gluten free bread crumbs (we used about 1 cup)
Sea salt and ground pepper (we used about 1 tsp sea salt and 1/4 tsp pepper)
Butter (we used 1/4 cup)
Preheat oven to 500℉
Place haddock in a glass baking dish
In a small bowl combine enough bread crumbs to cover the fish, a bit more sea salt than you think necessary and a little pepper. Sprinkle evenly over haddock. Drizzle with melted butter. Cover.
Bake at 500℉ for 10 minutes, uncover, continue until white and flaky (about 5 more minutes)
